Diversing the Expression in St. Maarten


St. Maarten is one of the smallest islands that are owned by the Dutch and French. The capital of the Dutch side is called Phillipsburg and the French capital is Marigot. Therefore, with their beautiful beaches and spicy Cuisine, St. Maarten is a place to be entertained. There are many activities that one can enjoy such as horseback riding and biking. Everyone who comes to this island, never wants to go back home. The culture in St.Maarten is very diverse from the music to the dances. The official language on the Dutch side is English and the French is English and French. Every year there is carnival where everyone comes out, and party from morning to the night. There is music from soca, calypso and also different traditional shows. However, knowing that this island is small there are so many different taste of food to enjoy. One of the most popular snacks that are known in the island are called bakes, which is also known as Johnny Cakes.

Recipe for Johnny Cakes:
1 lb. flour
2 teaspoons baking powder
2 teaspoons salt
1/4 teaspoon white sugar
1 cup vegetable oil
warm water
Combine flour, baking powder, salt and sugar in a large mixing bowl. Add enough warm water to make stiff dough. Knead well until dough is smooth and all lumps have disappeared. Place on floured board and allow to stand for 20-30 minutes. Heat oil in frying pan and drop small flattened portions of dough in hot oil. Fry until golden brown. Serve hot.
